Level 3 Diploma in Professional Cookery

This NVQ will take your professional food preparation and supervisory techniques to an advanced level.

Through work experience and practical and class-based sessions, the course covers:

• Positive working relationships in hospitality
• Risk assessments and how to reduce the risk of accidents in the workplace
• How to prepare and cook complex dishes, including fish, poultry, soups, sauces, vegetables and desserts

You will need to purchase equipment and clothing from an external supplier. All course costs will be discussed at interview.

Management or related higher level courses.

Entry requirements

You will need five GCSEs at Grades A*-C/9-4, including English and maths. You will have achieved Level 2 Professional Cookery or have a minimum of 2 years experience in a commercial kitchen environment. You should also be employed in an appropriate setting within the industry for a minimum of 10 hours per week. Your employer should be able to offer you supervisory responsibility alongside your college training.

You will need to attend a course suitability day as part of the interview process.
