On 12th June, the Ashford Level 2 Diploma in Professional Cookery students held a cooking competition between themselves, splitting into three teams to devise and prepare menus on the theme ‘Romantic Dinner for Two’.

The dishes they produced included stuffed pheasant with herby mascarpone and grilled asparagus, mini rack of lamb with a herb crust, boulangère potatoes and a red wine jus, crab ravioli with prawn bisque and samphire, white chocolate cheesecake with rhubarb compote and elderflower panna cotta.

The judges, who were composed of staff from various departments and the Executive Team gave some excellent feedback and were very impressed with all of the food produced.

Lecturer in Catering, Jackie Apps, said: “The students really proved themselves today with some excellent teamwork and inventive dishes. I am so proud of them and their achievements.”
